Recipe: 10 Minute High Protein Pasta

What you will need:

  • 350g dry whole grain pasta
  • 450g frozen spinach (with onions)
  • 1 cup chickpeas, cooked, drained and rinsed
  • 1 medium sized zucchini
  • 1 red bell pepper
  • 2 cups mushrooms
  • salt and pepper
  • soy sauce
  • tomatoes (optional)

Preparation:

  • cook pasta until al dente
  • cut up vegetables and put zucchini and pepper into the pan with half a cup of water, wait until water evaporates. Then add mushrooms and a bit more water and cook until water is completely gone
  • add frozen spinach and 2 tablespoons of soy sauce and let it cook until spinach is completely defrosted
  • add chickpeas and let it simmer for another 7-10 minutes
  • add salt and pepper for taste
  • once pasta is done, add everything to a plate and garnish with some fresh tomatoes (optional)
